In terms of what I want to know about non-alcoholic beverages: I'm always after a methodology, or a sense of how to structure a zero proof drink. I feel like there are a ton of Classic Drink Structures for the aspiring hobbyist, but I'd love to know more about how to translate those structures in the absence of a spirit. Like I can make plenty of variations on a sour knowing the basic proportions of a sour in terms of spirit / citrus / sweetness -- but a methodology for how to go about about translating that structure into the category of zero proof is very interesting to me, if the methodology isn't just "find a good zero proof version of gin/bourbon/mezcal," etc.
Or, alternately -- ideas for how to structure a non-boozy drink around a given ingredient, like a strong tea or an interesting syrup, etc. How do those non-alcoholic ingredients suggest a given structure.
I hope any of this makes sense! I feel the need to gesticulate throughout it to make myself understood, a sure sign I'm being opaque, whoops.
I'd love to hear more about non-alcoholic drinks that aren't trying to dupe specific alcoholic beverages! Personally, I do drink alcohol, just not super often; so if I'm in the mood for a glass of wine or a negroni or whatever, I'll just pour myself a glass of wine or a negroni or whatever. What I'd really love is to expand the repertoire of interesting, complex drinks I can reach for when I'm in the mood for something fun, but am not actually interested in feeling intoxicated – occasions like having a nice dinner at home alone on a weekend evening. I'd love to get more into non-alc mixology and try out some interesting things that are different from what I might get from classic cocktails!
